Mini Meatloaves and Crust-topped Broccoli Cheese Bake

Take one pound of extra lean ground beef, 1 package of prepackaged stuffing mix and 1 cup water and mix or match your recipe from these options.

Italian flavor: season with Italian seasoning, add 3/4 cup spaghetti sauce and 3/4 cup shredded Mozzarella cheese.

Fiesta flavor: 2 teaspoons chili powder, add 3/4 cup of a thick and chunky salsa and 3/4 cup of shredded Mexican style cheese.

BBQ: 1 teaspoon garlic powder, 3/4 cup barbecue sauce and 3/4 cup shredded cheddar cheese

Then follow these simple steps:
Preheat oven to 375 degrees. Mix meat, stuffing mix, water and your choice of seasoning until well blended. Press evenly into 12 medium muffin cups sprayed with cooking spray. Make an indentation in center of each with back of a spoon.

Spoon the add-ins evenly into indentations in meatloaves. Bake for 30 minutes or until the meatloaves are cooked through. The temperature should be 160 degrees. Top evenly with cheese, continue baking for five minutes or until cheese is melted. Let stand for ten minutes before serving.

1/2 cup of Philadelphia chive and onion cream cheese spread
1 can condensed cream of mushroom soup
1/2 cup water
2 packages (16 ounces each) frozen broccoli florets, thawed, drained
1 cup shredded cheddar cheese
1 thawed frozen puff pastry sheet (in the dairy freezer section)
1 egg, slightly beaten

Preheat oven to 400 degrees. Mix cream cheese spread, soup and water until well blended. Stir in broccoli and cheddar cheese. Spoon into 2-1/2 -3 quart baking dish.

Roll pastry sheet on lightly floured surface to fit baking dish. Cover dish completely with pastry. Press pastry edges against rim of dish to seal. Brush entire surface lightly with egg, pierce with knife five to six times to vent.

Bake for 30 minutes or until heated through and pastry is puffed and golden brown.

Makes 14 servings.
